I'm thinking of moving to WordPress is it easy? Blogger deleted all of my stats and all of my drafted & scheduled posts. So I'm going to have to rewrite everything for Vegan MoFo.

Random Thursday Things


So I'm kinda in the middle of figuring out when I actually start work or not. Right now I'm waiting to hear back if I go to orientation or not on Saturday; so I haven't though of what to blog for vegan mofo. So I'm going to show some of my random things from my week so far that I have either made myself or want to get or try.

My Story Of How I Became Vegan


I wanted to give everyone a little insight on how I came to be vegan and why I don't eat alot of tofu or soy products. It's a simply story however at the same time it is a long story but i'll try to keep it simple. Most of my life I had the choice to be vegetarian or not , so growing up I was used to not eating meat. However I only recently went vegan over the past 2 years, I had a choice and I didn't at the same time. 

The reason I say this is in late 2008 I had an serve allergic reaction to antibiotic that sent me to the emergency room and then into ICU burn unit. I was to the point to where I was so dehydrated that my body wouldn't allow me to hold on to water or anything; my whole body was in shock. My hear rate was all over the place really high at one moment then the next really slow, my skin was bright red and peeling off my upper body. I know it sounds surreal, but it isn't I went through something that I wish upon no one. During my time in the ER, I had taken so many test's and had multiple doctors  trying to figure out what was wrong.

Needless to say that night in the ER they put me in the ICU burn unit for overnight watch for multiple things. I remember that they had a rubber maid tub with a cloth and bleach that everyone had to step in first before entering or leaving my room. Then they had to put on gloves and a mask on too upon entering. It was like I was in a movie or something it didn't seem really until they next day. I got discharged the next day since I wasn't in shock anymore and my heart rate went back to normal.

Fast forward a month later, I went back to the doctor's office only to be told that I was allergic to sulfur and that I have SJS "Stevens Johnson Syndrome". That's where I started looking into going vegan because I was told officially allergic to eggs due to the natural recurring sulfur in them. To where if I ate eggs I would be in pain plus might have another serve allergic reaction sending me to the ER again. So I stayed vegetarian but didn't eat eggs or anything with sulfur in it.

Time went on I learned to cope with not eating eggs or anything with sulfur in it, however it wasn't the end to my food allergies. About 6 months later I ended up in the ER again this time it was related to my first time in the ER. I had multiple test ran again but come to find out that I was allergic to milk based products.That was my turning point where I went from vegetarian to vegan, that was where I didn't have the choice to not to be vegan. However I had already had the wanting and the heart to be vegan for animals.

Needless to say if I didn't have my serve allergic reaction, I would have still made the choice to be vegan but probably not so quickly. I do not regret that I am vegan I love and embrace it, and I'm learning new things every day about this life style and diet. Which leads me to why I don't eat tofu or soy products, I'm pretty much allergic to tofu since almost every brand as calcium sulfate or something with sulfate in it. 

Are there any brands of tofu that don't have sulfate in them?

Awesome Weekend

Oops. It's been two days since the last post and part of my MoFo theme was to blog each day of the month no matter what. Will, I guess I could make it up later and create two other posts about something random later in the month. I have been really doing nothing this weekend but just relaxing, and enjoying my time off before I start working.If you follow my Instagram you would have seen that I post a half of vegan pumpkin pie to celebrate my new job but that wasn't all I got.

You Deserve Some Chocolate


The past few days I have been really stressing that I had an interview coming up, which was very important to me. Simply because it was my second interview in the past year that I became unemployed, so I wanted a job badly before my next birthday. So there was alot of stress for me trying to get someone or a company to hire me within less than 66 days or so.  That hard work plus lot of time, really paid off yesterday; I got a part time job. I'm happy as can be even though it's not my dream job, it's a job I get to work with people face to face everyday which is nice.

So since I got myself a job, I decided that I deserved a treat. So I made myself a chocolate milkshake with banana and sweet cacao nibs in it. It was a perfect treat to fill that reward that I deserved. Now I did record the recipe below can be adjusted to fit your needs.

Chocolate Milkshake w/ Sweet Cocoa Nibs
  • 1/2 cup Trader Joe's Chocolate Coconut Ice Cream
  • 1 cup So Delicious Unsweetened Coconut Milk
  • 1 Medium Size Banana
  •  Handful of Nativa's Naturals Organic Raw Sweet Cacao Nibs
  • 1 tsp of Fresh Ground Peanut Butter (optional)

For this recipe all you really need is a single serving size blender and a spoon. I basically add only a little coconut ice cream but next time will add more for more of a thick milkshake recipe. This recipe gives you a milkshake that's in between. 

1. So get your single serving size blender cup put in the ice cream at the bottom.
2. Then peel the banana and break into chunks, after that is done then put banana in the cup.
3. Put coconut milk into the blender cup

Before blend.
4. Put any peanut or nut butter in it (optional)
5. Sprinkle a handful of sweet cacao nibs and blend for 30 seconds.

After Blend

I feel this milkshake was well deserved after the hard work look for a job, I can't wait to actually start. However this isn't the really celebration that I have a job, my friends want to celebrate this weekend that I got a job.

Smoothie Tuesday


I'm really spacing out today so for today I'm going to give you my favorite smoothie recipe in the morning that is really quick and easy. I was going to write up a long post but I'm nervous about my job interview tomorrow; lets just say it's my second interview in a year. I'm so freaked out but excited and oh so so nervous; so I'm not focusing very well today due to the nerves.


So on to the recipe, it's fairly simple you can change out the plant based milk to almond or even oat. Even the fruits can be switched out too, in this recipe I used strawberries and banana's that's what I had in my kitchen. Also fresh ground peanut butter is preferred in the recipe but I was out so I used jarred. On to the recipe:

Strawberry & Banana Coconut Smoothie:
  • One Medium Size Banana
  • About 5 Strawberries ( 1/2 cup - 1 cup depending on how strawberries you want)
  • 2 tbsp of ground flax seed
  • 1 cup of Unsweetened Coconut Milk
  • A pinch of green powder
  • 8 Ice Cubes
  • 1 tbsp Peanut or Almond Butter (Fresh Ground) Optional
Smoothie before the milk is add in & it's been blend.
I basically throw it all in a single serving size blender like the bullet but mine's not the bullet though. So I put my smoothie in the blender cup in this order: ice cubes, banana, strawberries, flax seed, green powder and then the cup of coconut milk then the nut butter if I want it.  Then you just blend together until it's smooth or to the texture you want it to be.  

I didn't get a picture of a the finished product, I was way to hungry this morning and well it disappeared before I got my camera out.  However instant of the finished product, I'm to give leave you with a picture of my favorite cat right now; he's not mine I wish he was though.


 He's in a animal shelter here in Houston called CAP ( Citizens For Animal Protection), he was given to that shelter from another shelter in Houston for a second chance. His name is Snicker's he's declawed and a sweetheart, I would know I got to hang out and play with him in a room for an hour. I'm sad that I couldn't adopted him, because he's been going from one shelter to another shelter.
